Mrs. Jessica Moss has been working in the culinary industry for over 20 years. During this time, she has been a culinary arts teacher for 6 years and is currently serving as the Culinary Arts instructor at the Biloxi High School Career Technology Center. In her nearly 7 years of teaching culinary arts, she has received the Teacher of the Year award twice. She also serves as a sponsor for the student organization, FCCLA (Family, Career, and Community Leaders of America). In this organization, she leads students through projects aimed at further developing, already present, leadership skills. These projects are then used to compete at the State level. In the Culinary Arts division of this competition, Mrs. Moss’s students achieved 1st place. First place was also accomplished by a number of other students, which resulted in the team traveling to the National Competition 2 years in a row. At the local level, her Culinary Arts students compete annually at the Chefs of the Coast event held at The Coast Coliseum. Last year, the culinary team won the competition, taking home the 1st place trophy and a $1000 check to further support the program. This year, the team placed third, resulting in a $250 donation to the program. In addition to teaching, Mrs. Moss owns a successful cake business. She has been baking and decorating cakes for over 7 years. With her business, Mrs. Moss is able to incorporate first-hand business knowledge and skills into her classroom teachings. Additionally, Mrs. Moss loves to host dinner parties for her friends. Cooking is a passion, and gathering with friends and family over food is something she loves to do. She hopes, this year, to continue her culinary development by enrolling in a Master Class by the renowned chef Thomas Keller, as well as beginning a monthly cooking club with her friends.

Chef Wendy Bosarge
Chef Wendy is a proud Biloxi born and raised, life-long resident of the Mississippi
Gulf Coast. She began her baking career early in life as she would watch and help
her mom, who was a great cook and baker in the kitchen. Wendy started baking on her
own (with some oversight from her mom) at the age of 10. As an adult, Wendy was a
stay-at-home mom with three young children. Knowing a bit about baking, Wendy took
an interest in icing and decorating cakes.
Chef Wendy is now a day one associate of the Scarlet Pearl Casino Resort. Chef Wendy frequently proclaims her job at Scarlet Pearl is “the best she’s ever had!” Wendy plans on staying at Scarlet Pearl “until they won’t let her stay any longer.” Wendy’s advice to aspiring pastry chefs is to stay in school and take advantage of the amazing programs available offering culinary, restaurant, hotel, and tourism courses. Learning everything as she did was great, however, had the programs available to students today been available for her when she was coming in to the industry, she says she might be retired and on a fishing boat today! (Just kidding!)
